A Dukan diet omlette idea

I have been eating omlettes a couple of times a week and usually pack them full of ingredients: sliced onions pre-fried in fry lite, chopped tomato, sliced ham, pre-fried chopped red pepper, corriander, chilli. Today though I was in a real hurry in the morning, so I thought I’d whip up an omlette in super quick time. The recipe turned out to be really delicious, so I’ll share it with you now.

Whisk up two eggs.  Whisk in freshly ground black pepper and half a teaspoon of Dijon mustard. Thinly slice a handful of wafer thin cooked turkey, so it is in ribbons. Stir into the egg mixture. Heat a frying pan that has been coated with fry lite. Pour in the mixture. Blob on three or four teaspoons of quark. Fry until the omlette is halfway cooked. Finish off under a hot grill until the egg starts to go puffy and the quark is melted. Serve with a tomato and onion salad, dressed with balsamic vinegar.

This omlette is really good for a couple of reasons. Not only does the turkey start to taste almost like bacon as it sinks to the bottom and fries, but the lumps of quark melt so that they are really delicious and creamy.
